BROASTED CHICKEN
Broasted chicken is a type of fried chicken cooked using a combination of pressure frying and traditional shallow frying. The process involves marinating the chicken, then pressure frying it to seal in moisture and flavor, followed by a final shallow frying to create a crispy crust.
The chicken is placed in a sealed pressure fryer, which is essentially a pressure cooker designed for frying. The pressure helps the chicken cook faster and retain more moisture.
The pressure environment creates steam, which helps cook the chicken from the inside out, resulting in a juicy and tender interior.
After pressure frying, the chicken is finished with a shallow frying step to create a crispy, golden-brown crust.
The term "Broasted" and the process itself are trademarked by The Broaster Company. This means that to be considered "Genuine Broaster Chicken," the chicken must be prepared using their specific equipment, marinades, and coatings.
Despite the name (a blend of "broil" and "roast"), broasted chicken is not roasted or broiled. It's a form of fried chicken that uses pressure frying to enhance the cooking process.
